Should I keep miso in the refrigerator?
When the temperature is too high, it can lead to changing of both the color and the flavor in miso.
Please keep miso in the refrigerator after the purchase.
The color of miso has turned darker a while after the purchase. Why?
Darkening of the color of miso is caused by Maillard reaction, which occurs when amino acids from soybeans, etc., chemically reacts with sugar and turns brown.
The change in color is observed in any miso.
Darkening of the color occurs rapidly especially in warm environment.
How long can I keep miso?
Miso is a “Preservative Food”, that can be kept for a long period of time due to its salt content.
Miso itself does not go bad, therefore if kept in the refrigerator, it should keep for 1 year.
I am not sure how to make dashi.

Dashi can be made easily by using “dashi in packets”or “granule dashi”that are sold in stores carrying oriental foods.
Chicken broth or vegetable broth may also be used in place of dashi.
I have purchased instant miso soup but not sure how to make it.
We offer 2 different varieties of instant miso soup. One variety has miso and ingredients in the separate packets, and the other has miso and ingredients together in a packet.
You can pour contents of the packets into a cup, no matter which variety you might have purchased. All you have to do is to add hot water into it, and it is done.
Miso may stay on the bottom, so please stir well.
Some of our products may come with dried leeks, etc., in separate packet.
Please add them into a cup to enjoy, if you like.
How much salt content does one bowl of miso soup have?
Average miso has about 10% of salt content. One bowl of miso soup has 1.4~1.6g of salt.
