Value-priced miso made from all Japanese ingredients

Hikari Miso today announced the December 2 launch of two varieties of miso made from all Japanese ingredients: “Kokusan Miso Koji” and “Kokusan Miso Koshi.” Both varieties come in 1 kg bags.
The use of all Japanese ingredients in these miso endow them with outstanding qualities. The high protein content of Japanese-grown soy beans draws out their robust flavor, and the fragrant and full grains of Japanese rice give the rice koji a subtle texture. Careful selection of ingredients is a key factor in making delicious miso and these new products contain only the finest Japanese soy beans, rice, and salt.
Following the release of our 750 g cups of “Mutenka Kokusan” miso last year to popular acclaim, the new 1 kg bags of Kokusan Miso expand our impressive lineup of miso products made from all Japanese ingredients. Japanese ingredients command a price premium over their imported counterparts; however we have been able to offer these new miso at very reasonable prices thanks to our streamlined production processes and innovative packaging. Characterized by the full and mellow texture of its rice koji and full-bodied aroma, “Kokusan Miso Koji” is a deeply flavorful “tsubu”* miso that is painstakingly matured to draw out the robust flavor of its soy beans.
“Kokusan Miso Koshi” draws out the refreshing sweetness of rice koji and boasts a smooth texture and refreshing aroma.
*”tsubu” miso has small grains of koji or soybeans that give it a chunky texture.
