The quality of soybeans is maximized in this miso.
Hikari Miso Co. Ltd. has announced the limited edition "Daizu no Homare (Pride of Soybeans)"on November 1st.
The most notable characteristics of the limited edition"Daizu no Homare (Pride of Soybeans)"is, that Hokkaido grown soybeansqToyoharukarmakes this miso as the main ingredient. It was first registered as the special variety soybeans for miso on August, 2005.
Usually, soybeans developed to produce tofu and cooked beans are mainly used for miso making.
However, the quality and the aptitude needed in soybeans for each manufactured food, such as tofu, cooked beans, miso, and natto (fermented soybeans), etc., all differ.
The first specially made soybeans for misoqToyoharukarwas chosen from 12 different domestic soybeans, which were considered to be the most suitable for miso making nationwide. After the analysis of the varieties and the evaluation of their qualities, Toyoharuka ranked first and was registered.
In order to produce high quality miso, the 3 desirable components in soybeans - taste, color, and texture are examined.
qToyoharukarhas a strong taste of sweetness, which goes hand in hand with umami flavor. It does not lose the vivid color even after the steaming and boiling process. It also keeps in the moisture, contributing for the smoothness in texture. In every way, Toyoharuka is the most suitable for miso making.
Daizu no Homare
Since qToyoharukaris grown in Hokkaido, we have also chosen the Hokkaido grown rice qKirara 397r, which is delicious and is very suitable for koji making.
These ingredients were manufactured in the cool climate of Shinshu, which is very fitting for the making and the fermentation of miso. "Daizu no Homare (Pride of Soybeans)"is the miso that was born in Hokkaido and raised in Shinshu.
