Unless we have the organic grown farm crops, except for water and salt, which are inorganic compound, we will not be able to produce "Organic Miso." Organically grown farm crops require to be free of pesticides and chemical fertilizers. Therefore, their farmlands are forbidden to use any pesticides and chemical fertilizers for more than 2 years, before the cultivation of crops. Soybeans and rice that we use for our "Organic Miso" are purchased from the farmlands that are organically certified, and of course, there is no use of additives or seasoning agents. |
In order to receive the certification of organic food, we must strictly oversee, that nothing but all organic ingredients are used, throughout the whole process of keeping the ingredients to packaging the products. We must also keep the records regarding miso ingredients, such as where they came from, and when they were harvested (traceability). Several steps like sanitary management within the plants, etc., must also be overcome, before strict inspections by certification organization registered with Ministry of Agriculture can be carried out. After this, "Organic JAS" certification can be granted. Even after receiving the certification, we go through inspections more than once a year. |
